Quinoa Stuffing

A healthier way to enjoy stuffing this holiday -- try an ancient grain call quinoa while celebrating cherished traditions!


2 cups white quinoa
4 cups water

½ cup dried cranberries
½ cup pecans, chopped
1 bunch green onions, chopped
¼ cup olive oil
2 tablespoons lemon juice
2 tablespoons fresh sage, chopped
salt and pepper to taste


In a medium sauce pan, add the quinoa and water together. Bring to a simmer and cook with the cover on for 15 minutes or until all of the water is absorbed. Remove from the heat and place the cooked quinoa in a bowl. Gently mix in the remaining ingredients. Season with salt and pepper. This dish can be served hot as a side dish or cold as a salad.
