Pineapple Chipotle Chicken Wings

For Marinade:
1 can chipotle peppers in Adobo, chopped
3 tablespoons apple cider vinegar
2 tablespoons light soy sauce
1/3 cup reserved pineapple juice
2 tablespoons horseradish
1 teaspoon fresh garlic, minced

For Chicken:
2 pounds chicken wings

For Pineapple Sauce:
2 8-oz cans crushed pineapple, drained (reserve juice for marinade)
1/2 cup honey
1 tablespoon cornstarch


For Marinade:
Add all ingredients to a large bowl and mix well to combine. Toss in the chicken wings and marinate at least an hour to overnight.

For Chicken Wings:
Preheat oven to 400°F. Place chicken wings and marinade in a pan and place in oven. Turn the pieces over occasionally to ensure they are all evenly coated and bake for 50-60 minutes until brown and fork tender.

For Pineapple Sauce:
While the wings bake, add all sauce ingredients to a large sauce pan. Cook over medium heat, stirring frequently until slightly thickened and heated through.
