Lebanese BBQ Chicken Sliders

For Fried Onions:
1 ea small yellow onion, peeled, trimmed, sliced thin
1/2 cup all-purpose flour
1 teaspoon kosher salt
1 teaspoon ground black pepper
1 teaspoon ground sweet paprika
1 teaspoon ground 7-spice

For Tomato-Parsley Salad:
3 tablespoons fresh parsley leaves, cleaned and chopped
12 pieces grape tomatoes, sliced
3 pinches red onions, shaved thin or small dice
kosher salt to taste
black pepper to taste
chili powder to taste
1 teaspoon lemon juice

For Sliders:
3 ea mini za'atar buns or Hawaiian rolls, tops and bottoms separated
3 ozs rotisserie chicken, shredded and warmed
3 ozs Lebanese BBQ sauce, warmed
3 pinches fried onions (see recipe)
3 tablespoons tomato parsley salad
3 teaspoons mustard, spicy


For Fried Onions:
Combine all dry ingredients and mix well. Add onions and toss in flour mix until evenly coated. Shake off excess flour and set aside. Fry onions until crispy and golden brown. Remove from oil and allow to drain well. Keep warm until assembly.

For Tomato-Parsley Salad:
Combine all ingredients and toss well. Chill until needed.

For Sliders:
Spread 1 teaspoon mustard on each bottom bun. Add 1 tablespoon tomato-parsley salad to each bun. Toss pulled chicken and BBQ sauce together and divide evenly among buns. Sprinkle 1 pinch fried onions atop chicken. Finish with top bun.
