Cream of Zucchini Soup

For any gardener ever wondering what to do with the bounty of zucchini in their summer garden or friends finding surprise gifts of this summer squash, try this easy recipe for a light lunch or dinner appetizer!


2 ea yellow onions, diced
6 ea medium zucchini, diced
6 tablespoons olive oil
3 cups vegetable broth
1/2 cup heavy cream
1/8 teaspoon kosher salt
1/8 teaspoon nutmeg


In a large saucepan, heat olive oil. Add diced onion and zucchini and saute until tender. Add remaining ingredients and simmer for 10 minutes. Using hand blender, puree soup. Adjust salt if necessary. Optional: Stir in 1/2 cup grated parmesan cheese before serving.
