Chef’s Halavas

Make your own rich and nutty decadence. The swirls of melt-in-your-mouth sesame, crunch of hazelnut and smoothness of fine dark chocolate transport you to a flavor sensation of the culinary kismet of Europe, the Far East and beyond. For YUMMY! perfection, pair with your favorite floral or fruity mousse, ice cream or gelato.

Ingredients


1-1/4 cup hazelnut paste (can be purchased at Phoenicia Specialty Foods)
1/4 cup powdered sugar
9 ounces halava (plain) (can be purchased at Phoenicia Specialty Foods)
12.5 ounces white chocolate
5-1/2 cups feuillantine (can be purchased at Phoenicia Specialty Foods)
1/2 cup butter
18 ounces dark chocolate
1 cup whipping cream


Directions


Melt first 4 ingredients in a metal mixing bowl over boiling water. When melted and smooth, add feuillantine. Pour mixture onto a parchment-lined sheet pan and refrigerate.

In another metal bowl over boiling water, melt butter and dark chocolate. When melted and smooth, add whipping cream (brought to a boil and added hot). Pour melted chocolate and cream mixture over the halava and refrigerate for at least 1 hour.

Remove and cut into the size of your choice. Keep refrigerated until serving.

Makes 1 small sheet pan.
