Ingredients

1 wheel Show Goat brie
2 tablespoon Cortas brand fig jam
2 tablespoon walnuts, toasted and chopped
1 each puffed pastry sheet (5" x 5")
1 each egg, lightly beaten with 1 tablespoon of water

Directions

Slice the wheel of brie lengthwise so that you have two equal rounds. Place the fig jam in the middle of one of the halves, cut side up. Do not spread the jam out to the edge. Leave about an inch all the way around. Sprinkle the walnuts on top of the jam. Place the other half, cut side down, on top of the fig jam and walnuts creating a whole wheel again. Lightly press around the edges of the wheel to seal in the jam.

On a lightly floured surface, gently roll the 5" x 5" piece of puffed pastry out to about 6" x 6". Place the stuffed wheel of cheese in the middle of the pastry and bring the corners and edges together pinching the seams closed. Turn the wheel over so that the seams are now on the bottom and place on a sheet pan that is lined with parchment paper. Lightly brush the top and sides of the pastry with the egg.

Place the wrapped cheese in a 350°F oven for about 20 to 30 minutes or until the puffed pastry is golden brown. Remove from the oven and let rest at least 30 minutes before cutting.
